There are a bunch of changes are coming down the pipeline here at Carlos O'Bryans this spring, and this blog post is to highlight one of the most important changes of them all. You know - aside from our new menu we are rolling out next week that will feature some brand new dishes, as well as a new take on some of our classics.
What I want to chat about today - is our brand new KM Nelson Isaak! Nelson has been our night Sous Chef for 2 years before he decided to make the transition to KM, and has been a big part of what goes on behind the scenes here. But now - he has the creative control and ability to start making some amazingly delicious changes around here. So Kamloops... get excited for what's to come - because we sure are!
We thought it would be fun to interview Nelson and ask him a few questions, to let our customers & staff get familiar with our new leader and broadcast our excitement with having him stepping up into this role!
So Nelson! Tell us a little something about yourself?
I'm 28 years old, i have a wife & three children and have wanted to run my own kitchen for my entire life basically. So this is what I've been working towards for a long time. It feels great to finally have this opportunity.
How long have you been cooking/known that you wanted to be a cook?
I've been cooking since i was 16 years old, but my father was a chef and so at a very young age i was helping him in the kitchen.
So, your father probably taught you most of what you know in the kitchen?
Pretty much, yes!
What's your favorite thing to cook?
I love to cook breakfast dishes & of course....Pachos!!
Is there anything you won't eat or are you someone that claims they enjoy everything?
Haha, well, i'll eat anything so long as it's prepared properly and executed well!
What's your favorite thing to cook on the menu here at Carlos O'Bryans?
The evil "ken"evil buffalo chicken burger! With Ham & Mozza cheese. It's delicious. And again...how can i not mention pachos?
Alright...if you could only eat one food for the rest of your life, what food would you choose?
I'd have to say perogies. I am a mennonite and could eat them 3 times a day for the rest of my life. Seriously.
Where would you love to travel & learn about their cuisine?
That's a tough one. I'd have to say Italy. Italian cuisine has to be my favorite.
Since taking over the COB kitchen, Nelson has decided to start running brunch from 11-2 pm on Saturdays and Sundays - and so far it's being received really well. We have some phenomenal dishes on the menu and we would LOVE for you to stop on by and try them.
We've got a very unique and i must say - INSANELY YUMMY - Hot 'n' Corny Breakfast sandwich!
2 medium fried eggs, bacon, roasted red peppers and ranch stacked in between two in-house made jalapeno corn fritters brushed with cajun garlic butter. You can add cheddar if you want to - and we highly recommend that you do.
Another brunch dish that is sure to lure you in here is a Savory Dutch Crepe with bacon, apples, carmelized onions, cheddar cheese. Served with a side of our special Carlos Hash & a side of hollandaise. Oh, and a piece of fresh fruit. 'Cause how do you brunch without a lil bit of fruit? You just don't. That's why.
